Nicky B’s isn’t a franchise. It’s the work of Nick Benatos — sandwich-lover, local, and the guy who’ll probably remember your name after one visit.
He’s behind the register most days, chatting to customers and making sure every sandwich that leaves the pass is one he’s proud of. What makes the place isn’t only what’s on the menu. It’s the care, the craft and the character behind it.
How it started
Ten years
Working on Sydney Harbour in the maritime industry — and cooking for the crew in the lunch room.
Six years
Trips to Greece every year, and the big, generous deli sandwiches made there with real care.
September 2024
Building work starts on the shop at Ramsgate Beach.
March 2025
Nicky B’s opens its doors on Ramsgate Road.
Keep it simple, do it properly
Every sauce is made in house. Nick renders his own beef tallow and there are no seed oils in the kitchen. Schnitzels are crumbed daily, and the bread — schiacciata, potato buns, sourdough tin loaf — is chosen to hold up to a lot of filling.
Nick’s rule for the team is that the mood you cook in ends up in the food. So the shop runs on good vibes, and the sandwiches are big, juicy and built to need both hands.
