Why tallow changes the game
Everything at Nicky B’s is cooked in beef tallow — pure rendered beef fat, the golden stuff from a slow-cooked brisket or a well-seared steak. We render it here in the shop. No seed oils.
Tallow gives a rich, buttery flavour and properly crisp edges that plant oils can’t match. It’s old-school, it’s satisfying, and it’s a big part of why our schnitzels, chips and hash browns taste the way they do.
Meet Nick
Nicky B’s isn’t a franchise. It’s one guy — Nick Benatos — who’s behind the register most days and will probably remember your name after one visit.
Nick spent ten years working on Sydney Harbour before trips to Greece and its huge, generous deli sandwiches sent him into hospitality. He opened Nicky B’s in March 2025.
